Lavender Shortcake Recipe
How to make Lavender Shortcakes
Lavender Shortcake is a wonderful summertime treat when paired with fresh strawberries or other fruit in season. Lavender Shortcake is a sweetened biscuit or scone dough variation and is easy to make. Fresh or dried Lavender flowers may be used in this Lavender Shortcake recipe. Harvest Lavender flowers just prior to use choosing ones of good color or use dried culinary Lavender.

Ingredients:
- 2 Tablespoons fresh Lavender flower or 1 1/2 Tablespoons dried Lavender buds (For Garnish)
- 2 cups unbleached all purpose flour
- 1/4 cup of granulated sugar
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/2 cup cold unsalted butter cut up into cubes
- 1 large egg lightly beaten
- 1 teaspoon Lavender flower extract
- 1/2 cup heavy cream or half and half
Filling/Topping:
1. Preheat oven to 400F.
2. Line a baking sheet with parchment paper or very lightly grease it.
3. Combine sugar, baking powder, flour, and salt in mixing bowl and stir to combine.
4. Add cut up butter to bowl and use a pastry blender or two knives to cut it into the flour mixture. Continue cutting until the mixture looks like coarse crumbs. This makes the shortcakes light and flaky.
5. Combine the egg, cream, Lavender extract together then quickly mix into the dry ingredients taking care not to over mix which will toughen the dough. You want light fluffy shortcakes!
6. Turn out the dough onto a lightly floured surface, a cold marble slab works great, and press into a 8 inch round with a even thickness of 1 inch.
7. Cut out shortcakes using a biscuit cutter and place on baking sheet.
8. Bake for 15-20 minutes until lightly golden on top then cool on wire rack.
