Delicious Lavender Scones
Lavender Scones are easy to make and are as delicious for breakfast as they are elegant for late afternoon tea. To make Lavender Scones you have the option of using fresh Lavender, dried Lavender or even Lavender extract. So there is no reason not to enjoy them at any time of year. Lavender Scones Recipe
Here is one of my often used and favorite recipe for making Lavender Scones. It is pretty simple to do. Just measure out all the dry ingredients together. Do the same for the wet ingredients. Method follows the ingredients list.
Ingredients:

Dry Ingredients
- 2 Tablespoons Sugar
- 2 Cups Unbleached All Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/2 Cup Cold Butter finely chopped into small 1/2" cube chunks
- 1 Tablespoon fresh or dried Lavender buds finely chopped OR
- 1/2 teaspoon Lavender Extract
- 3/4 Cup Buttermilk or Substitute 3/4 cup milk with and 1 Tablespoon of White Vinegar
- 1 Egg separated reserving Egg White to brush scone tops
Wet Ingredients
Place all dry ingredients into a large mixing bowl. Stir gently to combine. Next cut in the cold butter using a pastry blender or your hands. The mixture should look coarse and lumpy. Do not expect the butter to be absorbed by the dry mixture but to be visibly lumpy and evenly distributed throughout. Set mixture aside.
Preheat your oven to 375 degrees Fahrenheit.
Now combine all the wet ingredients including the Lavender flower or the extract. Stir to combine egg yolk then add to the bowl with the dry mixture quickly folding / blending together to form a dough using a spatula. For this recipe shown here I used the Lavender extract otherwise my dough would have been lightly flecked with Lavender flowers.
The Scones, like biscuits, will be tough if the dough is over worked. Turn out dough onto a lightly floured surface and pat or roll gently until you have an even thickness about 3/4 inch thick. Use a heart shaped cutter to make Lavender Heart Scones or a round drinking glass will work too to cut out scones.
Place on lightly greased cookie sheet; brush tops lightly with egg white. My daughter loves the cutting out part so I happily delegate the job to her.
Bake for 15- 20 minutes until just starting to show some golden color. Remove and cool, admiring your hard work.
Drizzle with Lavender lemon icing or just some powdered sugar mixed with enough butter to form a spreadable glaze. You can top with a few fresh Lavender flowers if you choose for a lovely presentation.
Needless to say this plate of Lavender Scones did not make it long after this picture was taken as my family quickly devoured them all up! Hope you too enjoy this Lavender Scones Recipe!
